Coarse salt and fifteen minutes over the embers. You eat them with your fingers, looking at the water. Season: May to October, for real.

Before you choose.

Are there sardines all year?+

No — the months without an "r" are the good ones (May to August, stretching into October). Out of season, the chalkboard offers something else.

Do you take cards?+

Yes, and Bizum (Spain's mobile payment app). Though Manolo still prefers the crumpled bill, same as ever.

You can't fake the smoke.
