Nobody brings the check unless you ask. The coffee drags on, dessert is shared and the afternoon moves in at the table.

The dining room lowers its voice. Candles on the tiles, Axarquía wine and the kitchen open with the same old fire.

The outdoor tables go dark and the one inside stays lit. The glass Lola pours when nobody's in a hurry anymore.
What comes across the bar

On the menu since 1987
The recipe Lola wrote by hand in a notebook that's still in the kitchen. Potato boiled the same day, tuna from Barbate, mayonnaise whisked by hand.

Six pieces · thin crust
The oxtail is braised the day before, boned while hot, and the béchamel rests twelve hours. That's why the filling holds together and doesn't turn to paste in your mouth.

With smoked parmentier
Cooked just right, finished over embers until the skin crackles. Underneath, a parmentier (smooth potato purée) smoked with vine cuttings that acts as a sauce without hiding the octopus.

The menu rarely changes: what has worked since '87 stays. Seasonal dishes are called out on the chalkboard at the bar.

She opened in '87 with six tables and one fryer. The notebook with her recipes is still in the kitchen, and the ensaladilla is made exactly as written.
A ceramist from Triana laid them and got paid in meals. We've never changed them: every broken piece is replaced by hand, just like day one.
Today her daughter runs it, with the same impossible schedule. The only thing that's changed is the wine: now there are 28 labels from the Axarquía.

The bar doesn't close between services.
Before you come
The bar is always first come, first served — it's part of the house's character. Dining room and patio tables can be reserved up to 15 days ahead.
A third of the menu is. The eggplant with cane honey, the omelet and the padrón peppers have been there since day one; in season we add two more garden dishes.
The patio long table seats 8 to 14 guests with a set tapas menu and wine included. Book 72 hours in advance.
We're on it, but booking directly here gets you table priority and the first glass of vermouth on the house. It saves us the commission and gets you a better table.
Tuesday to Thursday we usually have room, but after 9:00 pm the dining room fills up. Booking that same morning is enough.
